Ingredients:

For the potato:

Large sweet potato

2 tbsp goats cheese

1/2 avocado

For the salad:

5 cherry tomatoes, halved

Small chunk of cucumber

Handful of rocket

Black olives

Salt and pepper

Drizzle of olive oil

Drizzle of balsamic vinegar

Method:

Preheat the oven at 180 °C

Prick the sweet potato in several places and bake in the oven for approximately 45 minutes, or until soft

While the potato is cooking, prepare your salad. Chop the olives length-ways, slice the cucumber into circular shapes of even width and then quarter them

Take a handful of rocket and place onto the side of your plate

Drizzle the leaves with balsamic vinegar and olive oil. Take the other prepared salad ingredients and place them on top

When the potato is soft in the middle, take it out of the oven and cut it down the middle (not all the way through the potato) and fill with the goats cheese

Put the potato back in the oven until the cheese has melted. Then take it out and top with the slices of avocado

Finish everything off with a bit of salt and pepper for extra flavour
